In pastry chef Anna Olson’s household, the aroma of cardamom-spiced prune filling bubbling away on the stove means Christmas. Prunes are the preserved fruit of choice for vinarterta, a seven-layer shortbread cake iced with buttercream frosting. It experienced its heyday in the 19th century but lives on in the hearts of Icelandic Canadians.
